Special Occasions Recipes - Orange Syllabub Recipe

Ingredients

Serves 6

  • grated rind and juice of 2 oranges

  • grated rind and juice of 1 lemon

  • 75 g/3 oz caster sugar

  • 2 tablespoons Cointreau

  • 300 ml/1/2 pint double cream


Method:

  1. Place the orange and lemon rinds in a bowl with the juices and sugar.

  2. Add the Cointreau, cover and refrigerate for 1 hour. Add the orange mixture to the cream and whisk on medium speed until it holds its shape.

  3. Pour into glasses and chill until required. Serve with crisp biscuits.
