grated rind

juice of 2
oranges

grated rind and juice
of 1
lemon
-
75 g/3 oz caster
sugar
-
2 tablespoons
Cointreau
-
300 ml/1/2 pint
double cream
Method:
-
Place the orange and lemon rinds in a bowl with the
juices and sugar.

Add the Cointreau, cover and
refrigerate for 1 hour. Add the orange mixture to
the cream and whisk on medium speed until it holds
its shape.

Pour into glasses and chill until
required. Serve with crisp biscuits.
