Sorbet Recipe

10 passion fruit
1 tablespoon lime juice
100 ml/3 1/2 oz water
1 egg
white
1 teaspoon caster sugar
Sorbet syrup:
300 g/10 oz sugar
300 ml/1/2 pint water
Method:
First prepare the sorbet syrup. Place the sugar and
water in a pan. Heat to boiling point, stirring
continuously to dissolve the sugar. Allow to cool.
Scoop
the flesh out of the passion fruit. Liquidize with the
lime juice and water for about 10 seconds. Strain the
juice into a freezer container and combine with the
sorbet syrup.
Place the freezer container in the freezer
and freeze for 2-3 hours or until almost solid.
Whisk
the egg white and caster sugar until
stiff.
Remove the sorbet from the freezer and beat in the egg
white. Return the sorbet to the freezer for 1-2 hours or
until set.
If the sorbet has been in the freezer for 24
hours or longer, transfer to the refrigerator 15 minutes
before serving to soften slightly.
