Scottish Scallops with Sage Recipe

Method:
-
Dry the scallops thoroughly with kitchen paper.

Heat a
griddle pan or nonstick frying pan, add the
scallops and cook on each side for 2-3 minutes.
Add the sage leaves and cook until just wilting.

Mix together the olive oil and the balsamic
vinegar in a shallow dish.

Remove the scallops
and sage from the heat and toss well in the
dressing. Season and serve immediately with
wedges of lemon.
