Special Occasions Recipes - Quick Griddled Scottish Scallops with Sage Recipe

Ingredients

Serves 4

  • 16 Scottish scallops

  • 1 bunch of sage leaves

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • sea salt and pepper

  • 4 lemon wedges, to garnish


Method:

  1. Dry the scallops thoroughly with kitchen paper.

  2. Heat a griddle pan or nonstick frying pan, add the scallops and cook on each side for 2-3 minutes. Add the sage leaves and cook until just wilting.

  3. Mix together the olive oil and the balsamic vinegar in a shallow dish.

  4. Remove the scallops and sage from the heat and toss well in the dressing. Season and serve immediately with wedges of lemon.
