Rare Roast Beef
and Tomatoes with Mustard Sauce Recipe

1.25 kg/2 1/2 lb beef fillet

tablespoon olive oil

1
garlic clove, sliced

2
red onions, sliced

16 small tomatoes
-
2
tablespoons chopped coriander leaves

2 tablespoons
Dijon mustard

2
tablespoons coarse grain mustard

2
tablespoons clear honey
-
sea salt and pepper
Method:

Heat
a griddle pan or nonstick frying pan. Season the
beef fillet, rubbing in the seasoning.

Place the
fillet on the griddle or pan and cook for 20-25
minutes, turning frequently, until charred on all
sides.

Transfer to a lightly oiled roasting tin and cook in a
preheated oven, 220°C (425°F),
Gas
Mark 7, for 10-15
minutes for
rare and 20-25
minutes for medium. Remove from the oven and allow
to rest for 10 minutes.

Heat the oil in a pan. Add the garlic and onions and
cook for 5 minutes. Add the tomatoes, season to
taste with salt and pepper and warm through for 3
minutes. Stir in the coriander.

Warm the two mustards in a small saucepan with the
honey. Stir until blended.

Slice the beef and serve
on a bed of the tomato mixture, with the mustard
sauce drizzled over the top.
Note: This is a lavish
but delicious meal, perfect for serving at a supper
party.
