Special Occasions Recipes - Roasted Asparagus with Coriander and Lime Recipe

Ingredients

Serves 4-6

  • 750 g/1 1/2 lb asparagus

  • 8 tablespoons olive oil

  • 3 tablespoons lime juice

  • sea salt and pepper

  • torn coriander leaves, to garnish


Method:

  1. Trim the asparagus and use a potato peeler to peel the skin from about 5 cm/2 inches of the base of each stalk.

  2. Arrange the asparagus in a single layer in a shallow roasting tin. Spoon 4 tablespoons of the olive oil over the asparagus and shake lightly to mix.

  3. Roast in a preheated oven, 200°C (400°F), Gas Mark 6, for about 20 minutes, until just tender, turning the asparagus once during cooking. Leave to cool.

  4. Transfer the roasted asparagus spears to a shallow dish and spoon the remaining olive oil and the lime juice over the top.

  5. Sprinkle with the salt and pepper and toss lightly. Garnish with torn coriander leaves.
