Roasted Asparagus
with Coriander and Lime Recipe
Ingredients
Serves 4-6
750 g/1 1/2 lb asparagus
8
tablespoons
olive oil
3 tablespoons lime
juice
sea salt and pepper
torn coriander
leaves, to garnish
Method:
Trim the asparagus and use a potato peeler to peel
the skin from about 5 cm/2 inches of the base of
each stalk.
Arrange the asparagus in a single layer
in a shallow roasting tin.
Spoon 4 tablespoons of
the olive oil over the asparagus and shake lightly
to mix.
Roast in a preheated oven, 200°C (400°F),
Gas Mark 6, for about 20 minutes, until just tender,
turning the asparagus once during cooking. Leave to
cool.
Transfer the roasted asparagus spears to a shallow
dish and spoon the remaining olive oil and the lime
juice over the top.
Sprinkle with the salt and
pepper and toss lightly. Garnish with torn coriander
leaves.
