Special Occasions Recipes - Sesame-crusted Salmon Fillet Salad Recipe

Ingredients

Serves 4

  • 500 g/1 lb thick salmon fillet

  • 2 egg whites, lightly beaten

  • 1 tablespoon white sesame seeds

  • 1 tablespoon black sesame seeds

  • 2 bunches of watercress

  • 1 frise lettuce, divided into leaves

  • 4 spring onions, cut into thin strips and placed in water

  • sea salt and pepper

Dressing:

  • 3 tablespoons white wine vinegar

  • 5 tablespoons vegetable oil

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon caster sugar

  • 1 bunch of chives, chopped


Method:

  1. Dry the salmon with kitchen paper, then dip in the egg white. Mix the sesame seeds and seasoning together on a large plate. Roll the salmon in the sesame seeds and pat on the seeds all over to give a good even coating.

  2. Heat a griddle pan or nonstick frying pan, put on the salmon and cook for 2 minutes on each side for rare, or 5 minutes for well done.

  3. Process the dressing ingredients in a blender or place in a screw-top jar and shake well to combine. Toss the watercress and frise in the dressing and arrange on a large serving dish.

  4. Slice the salmon fillet with a sharp, thin-bladed knife and arrange on top of the salad. Drain the spring onions, dry on kitchen paper and sprinkle over the salmon.

Note: The crust on this salmon makes it really special. The dressing is a must as it complements the slightly oriental salmon so well. This is a great dinner party dish, because it is not only easy to prepare, but also sensational both to look at and to eat.
