Sirloin Steaks
with Tomato Garlic Sauce Recipe

4 sirloin steaks,
trimmed

15 g/1/2 oz butter basil sprigs, to garnish
Sauce:
Method:

First skin the tomatoes. Place them in a bowl and cover
with boiling water. Leave for 1 minute, then remove from
the water and slip off the skins.

Cut into quarters,
remove and discard the seeds, then chop the flesh. Beat
the steaks with a meat mallet or rolling pin until
fairly thin, then dot with the butter.

Cook under a
preheated hot grill for 8-10 minutes, or as preferred,
turning once.

Meanwhile, make the sauce. Combine the tomatoes, garlic
and basil in a saucepan. Add salt and pepper to
taste. Simmer for about 10 minutes until the tomatoes
are soft.

Transfer the steaks to a warmed serving dish
and pour over the sauce. Serve immediately, garnished
with the basil sprigs.
