Special Occasions Recipes - Spaghetti with Lobster Recipe

Ingredients

Serves 4

  • 8 plum tomatoes

  • 1 kg/2 lb lobster, cooked and cut in half lengthways

  • 300 g/10 oz spaghetti

  • 4 tablespoons olive oil

  • 2 shallots, chopped

  • 4 tablespoons lemon juice

  • handful of chives, chopped

  • salt and pepper


Method:

  1. First skin the tomatoes. Place them in a bowl and cover with boiling water. Leave for 1 minute, then remove from the water and slip oft the skins. Cut into quarters, remove and discard the seeds, then chop the flesh.

  2. Remove all the meat from the lobster and cut it into bite-sized chunks. Cook the pasta in a saucepan of salted boiling water until al dente. Drain well.

  3. Meanwhile, heat the oil in a saucepan, add the shallots and sauté for 3 minutes. Add the tomatoes and lemon juice, season with salt and pepper and cook for a further 3 minutes.

  4. Add the lobster to the tomato sauce, stir, reduce the heat and cook for 4 minutes.

  5. Add the sauce to the pasta with the chopped chives, toss with two wooden spoons and serve immediately.
