Spicy Crab Salad Recipe
Ingredients

2
large lettuce
leaves
Chinese leaves,
shredded
250 g/8 oz cooked
crab meat
2 tomatoes, cut
into wedges
2 hard-boiled eggs,
peeled and cut into wedges
Dressing:
125 ml/4 fl oz
Mayonnaise
50 ml/2 fl oz chili sauce
2 spring onions, chopped
1 tablespoon chopped
parsley
1 teaspoon tomato
puree
dash of
Worcestershire sauce
50 ml/2 fl oz
double cream, whipped
salt and pepper
Method:
First make the dressing. Combine the mayonnaise,
chili sauce, spring onions, parsley, tomato
puree and Worcestershire sauce in a bowl, and
season to taste with salt and pepper.
Stir well
to mix, then fold in the whipped cream. Cover
and refrigerate for at least 1 hour.
Line a
serving platter with the lettuce leaves and make
an even layer of shredded Chinese leaves in the
centre. Pile the crab meat on top.
Arrange the
tomato and egg wedges around the crabmeat. Spoon
some of the dressing over the crab and serve the
rest separately.
