Tagliatelle with
Fresh Truffles Recipe

300 g/10
oz dried tagliatelle
-
125 g/4 oz
truffles
-
125 g/4 oz
butter
-
1/2
tablespoon truffle oil
-
handful of flat leaf parsley, chopped

75 g/3
oz Parmesan cheese, grated

salt and pepper
Method:

Cook the
pasta
in a saucepan
of lightly salted
boiling
water until al dente.

While the pasta is cooking, clean the truffles with
a clean, dry soft brush, dusting away any dirt.
Finely slice the truffles using a mandoline.

Drain
the pasta, add the butter, truffle oil, parsley and
Parmesan and season to taste with salt and pepper.
Toss well.

Add half of the sliced truffles to the
pasta and toss
again.
Serve garnished with the remaining truffles.
Note:
Truffles
are in
season
in the autumn and early winter months,
and you can find them in specialist delicatessens.
They are very expensive but a great treat. It really
isn't worth using truffles from a can
or jar as they bear no resemblance to the flavor
of fresh truffles.
