Special Occasions Recipes - Tagliatelle with Smoked Salmon and Asparagus Recipe

Ingredients

Serves 4

  • 250 g/8 oz asparagus tips

  • 375 g/12 oz tagliatelle or fettuccine (fresh or dried)

  • 125 g/4 oz smoked salmon, cut into thin strips

  • 300 ml/1/2 pint double cream

  • 1 tablespoon chopped tarragon

  • salt and pepper

  • fresh Parmesan cheese shavings, to garnish


Method:

  1. Blanch the asparagus tips in boiling salted water for 5 minutes. Drain under cold running water and pat dry.

  2. Meanwhile, cook the pasta in a saucepan of salted boiling water until al dente. Drain and return to the pan.

  3. Toss over a low heat with the asparagus, smoked salmon, cream, tarragon and salt and pepper, until it is completely heated through.

  4. Transfer to a warmed serving dish and garnish with wafer-thin shavings of Parmesan.
