Tagliatelle with
Smoked Salmon and Asparagus Recipe

250 g/8 oz
asparagus tips
-
375 g/12 oz
tagliatelle or fettuccine (fresh or dried)
-
125 g/4 oz
smoked
salmon,
cut into thin strips
-
300
ml/1/2 pint
double cream
-
1 tablespoon
chopped tarragon
-
salt and pepper
-
fresh Parmesan
cheese shavings, to garnish
Method:
-
Blanch the asparagus tips in boiling salted water for 5
minutes. Drain under cold running water and pat dry.
-
Meanwhile, cook the pasta in a saucepan of salted
boiling water until al dente. Drain and
return to the pan.

Toss over a low heat with the
asparagus, smoked salmon, cream, tarragon and salt and
pepper, until it is completely heated through.
-
Transfer
to a warmed serving dish and garnish with wafer-thin
shavings of Parmesan.
