Venison Steak with
Redcurrant and Cranberry Sauce Recipe

Sauce:
Method:

Mix
the juniper berries with salt and pepper and spread over
both sides of the venison steaks. Set aside for at least
1 hour or preferably overnight to absorb the flavors.

To make the sauce, place the ingredients in a small
saucepan and then simmer gently for 10 minutes, stirring
constantly.

Meanwhile, heat a griddle pan or nonstick frying pan.
Put on the venison steaks and cook for 3 minutes on each
side for rare, 5 minutes for well done.

Serve
immediately with the redcurrant and cranberry sauce.
Note:
Venison
steak
from the loin or fillet is
not always available, so ask your butcher if you
can use another cut. This makes a lovely winter dinner,
rich in color and flavor.
