Special Occasions Recipes - Venison Steak with Redcurrant and Cranberry Sauce Recipe

Ingredients

Serves 4

  • 1 teaspoon crushed juniper berries

  • 4 venison steaks, from the fillet or loin sea

  • salt and pepper 

Sauce:

  • 125 g/4 oz redcurrant jelly

  • 125 g/4 oz cranberries

  • grated rind and juice of 1 orange

  • 2 tablespoons red wine


Method:

  1. Mix the juniper berries with salt and pepper and spread over both sides of the venison steaks. Set aside for at least 1 hour or preferably overnight to absorb the flavors.

  2. To make the sauce, place the ingredients in a small saucepan and then simmer gently for 10 minutes, stirring constantly.

  3. Meanwhile, heat a griddle pan or nonstick frying pan. Put on the venison steaks and cook for 3 minutes on each side for rare, 5 minutes for well done.

  4. Serve immediately with the redcurrant and cranberry sauce.

Note: Venison steak from the loin or fillet is not always available, so ask your butcher if you can use another cut. This makes a lovely winter dinner, rich in color and flavor.
