Braised Peas and Bibb Hearts with New Potatoes Recipe
Ingredients

12 oz small new
potatoes
-
sea salt flakes
-
freshly ground
black pepper
-
a little unsalted
butter
-
4 fat scallions,
green parts included, thickly sliced

2 'Bibb' lettuce
hearts, quartered lengthwise
-
1 1/2 cups shelled
peas
-
lemon balm, mint
or chervil sprigs, to garnish
Serves 2 as a light
meal
Method:

Cook the potatoes in their skins until just
tender. Drain, season to taste, and keep warm.

Melt the butter in a skillet. Add the scallions
and cook over medium heat until just soft.

Throw in the lettuce and peas, along with a
splash of water or stock. Cook for 1-2 minutes,
until the lettuce is just tender but still
brightly colored and crisp.

Add the potatoes to the pan. Check the seasoning
and Strew with herbs before rushing to the
table. Not a dish to be kept waiting.
Note: Freshly
shelled peas, crunchy lettuce hearts, and earthy new
potatoes tossed in a generous amount of butter make
great summer eating. Use the outer lettuce leaves in
a salad.
