Broiled Duck Breast
with Broccoli Raab and Chili Jam Recipe
Ingredients
-
3 boneless
Barbary duck breasts, weighing about 10 oz each
-
sea salt
flakes
-
freshly
ground black pepper
-
2 lb broccoli
raab, tough stalks and outer leaves removed
-
a little
butter
-
chili jam, to
serve
Serves 4
Method:
-
Rub the duck skin
with salt and season the breasts on both sides
with salt and pepper. Place skin side down on a
broiler pan and cook under a preheated hot
broiler, about 6 inches from the heat
sources, for 10 minutes.

Turn the breasts
over and broil for 10-15 minutes more, until the
skin is crispy and the flesh still juicy and
slightly pink. Let stand in a warm place.

Have ready a large
saucepan of boiling salted water. Plunge in the
broccoli raab and cook for about 5 minutes,
until it is just tender. Drain thoroughly,
squeezing out all the moisture, then return to
the pan, season to taste, and add the butter.

Thinly slice the
duck breasts at an angle. Divide the broccoli
raab between four warmed plates and arrange the
duck slices on top, pouring over any juices that
have accumulated.

Serve with a
spoonful of chili jam and a starchy vegetable of
your choice.
