Ingredients 

  • 4 corn ears, with husks

  • juice of 2 limes

  • 1 tablespoon chopped fresh cilantro or epazote

  • generous pinch of dried chili flakes

  • sea salt flakes

For the chili and lime butter (optional):

  • 1/2 cup unsalted butter

  • 2 tablespoons chopped fresh cilantro or epazote

  • finely grated zest of 1 lime

  • 1-2 teaspoons dried chili flakes

Serves 4 as an appetizer or snack


Method:

  1. If you want to serve the com with chili and lime butter, mash all the ingredients together with a fork. Form into a cylinder and chill well before cutting across into slices.

  2. Place the com ears in their husks under a preheated very hot broiler or over hot coals for about 10 minutes, turning occasionally.

  3. Slit the husks and silks lengthwise and pull apart to expose the com. Squeeze over the lime juice and sprinkle with chopped cilantro or epazote, chili flakes, and sea salt.

  4. Eat straight from the husk. Alternatively, remove the husks and silks, chop the cobs into three or four pieces, and put them in a serving bowl. Then add the seasonings.

Note: The sharp clean taste of the lime and cilantro or epazote If you grow It Is perfect with the sweetness of the com. If com without butter cannot be contemplated, however, serve It with chili and lime butter Instead.
