Glazed Turnips with Cilantro and Orange Recipe
Ingredients

2 lb turnips, left
whole and un peeled if small, otherwise peeled
and quartered

3 tablespoons
butter
-
1 teaspoon
coriander seeds, crushed

2 tablespoons sugar
-
finely grated zest
of 1
small orange
-
3/4 cup chicken or
vegetable stock, preferably homemade
-
sea salt flakes
-
coarsely ground
black pepper
-
1 tablespoon orange
juice
-
2 tablespoons
chopped fresh cilantro or flatleaf parsley
Serves 4 as a side

Method:

Plunge the turnips
into a large saucepan of boiling salted water. Cook
for 3-4 minutes until barely tender, then drain.

Melt the butter in a skillet into which the turnips
will fit snugly in a single layer. As the butter is
melting, sprinkle in the coriander seeds.

When the
butter is foaming, slip in the turnips, sprinkle
with the sugar and orange zest, and cook over
moderate to high heat, turning, until the turnips
are beginning to color at the edges.

Pour in the
stock, season generously, then simmer briskly for a
few minutes until the liquid is reduced and syrupy.
Stir in the orange juice and sprinkle with the fresh
cilantro or parsley.
Note: The sweet syrupy
juices in this dish contrast well with the slightly
bitter turnips, and the orange juice pulls it all
together. This is delicious as an accompaniment to a
roast, or served as a vegetarian main course with a
dish of steamed leafy greens or a bitter leaf salad.
