with Chorizo Recipe
Ingredients

3 tablespoons olive
oil
-
1 large white
onion, thinly sliced into crescents

3 garlic cloves,
minced

2-3 large
mild
green chilies, such
as Anaheim, seeded and roughly chopped

1 teaspoon dried
oregano or thyme

6 oz Spanish chorizo sausage, thickly
sliced

3 cups shredded
savory cabbage
-
1 1/4 cups chicken
stock, preferably homemade

3 1/2 cups cooked
lima beans or other large beans

salt
and freshly ground black pepper

3 tablespoons
chopped fresh cilantro
Serves 4 as a main
course
Method:

Heat the oil in a large frying pan with a lid, and
fry the onion over medium heat until soft but not
colored.

Add the garlic, chilies, and oregano or
thyme, and fry for another minute or two. Then stir
in the chorizo and let it sizzle for a bit.

Add
the cabbage and stock, and bring to the boil. Stir
in the beans and season to taste with salt and
pepper, bearing in mind that chorizo is quite
highly seasoned.

Cover and
simmer for 5-10 minutes, depending on how tender
you like your cabbage. Sprinkle with cilantro
before serving.
