Kohlrabi, Apple and Walnut Salad Recipe
Ingredients

3 small kohlrabi,
peeled, sliced, and cut into bite-sized segments

2 crisp red-skinned
apples, diced

lemon juice
-
handful of young sorrel, torn into shreds

1/4 cup
walnut halves, broken into pieces

walnut oil
dressing
Serves 4 as an
appetizer
Method:

Combine the kohlrabi and apples in a serving bowl.
Sprinkle with a little lemon juice to prevent
browning. Add the sorrel and walnuts.

Whisk
together the dressing ingredients. Just before
serving, pour the dressing over the salad and
toss well.
Note: Kohlrabi's fresh
flavor goes well with the lemony sharpness of
sorrel. If sorrel is unavailable, use watercress or
arugula instead.
