Mixed Bean Chili with Chorizo Recipe
Ingredients

1 teaspoon cumin
seeds
-
2 teaspoons
coriander
seeds
-
2 teaspoons dried
oregano
-
1 1/2 lb podded fresh
shelling beans
-
3 tablespoons olive
oil
-
2 onions, finely
chopped
-
2 red sweet
peppers, seeded and diced
-
2 garlic cloves, minced
-
2-3 chilies, seeded
and finely chopped
-
8 oz chorizo sausage, thickly
sliced
-
2 tablespoons tomato paste
-
14 oz can of
chopped tomatoes
-
1 1/4 cups meat or
chicken stock
-
salt and freshly
ground black pepper
-
4 tablespoons chopped fresh
cilantro
Serves 6
Method:
-
Put the cumin and coriander seeds
in a small heavy-bottomed skillet without any
oil and dry-fry over moderate heat until
fragrant. Sprinkle with the oregano, fry for a
few seconds, then immediately remove from the
pan. Using a pestle and mortar, lightly crush
the mixture.

Boil the
beans for about 7 minutes, until only just
tender. Drain and set aside.

Heat the oil
in a large saucepan. Add the onions and the
spice mixture, and cook for a drew minutes. Add
the red sweet peppers, garlic, and chilies, and
gently fry over medium heat for 5 minutes.. When
the peppers are soft, stir in the chorizo and
tomato paste, and cook for 2-3 minutes.

Pour in the
chopped tomatoes and stock. Season with salt and
pepper bearing in mind the saltiness of the
chorizo. Bring to the boil and add the beans,
Simmer for 10 minutes.

Just before
serving, check the seasoning and stir into he
cilantro.
