Nasturtium
Roll-Ups Recipe
Ingredients

24 nasturtium leaves, about
3
inches in diameter (the
variegated variety looks the prettiest)

nasturtium flowers,
to garnish
For filling 1:
-
8 tablespoons
spreadable goat cheese

5 nasturtium flowers, chopped
-
3 tablespoons
snipped garlic chives or ordinary chives
For filling 2:
-
8 tablespoons cream
cheese
-
crushed seeds from
3 cardamom pods
-
a little freshly ground black pepper
For filling
3:
-
8 tablespoons cream
cheese
-
1/2 oz smoked
salmon, chopped
-
pinch of finely grated lemon zest
-
freshly ground black pepper
Each filling is enough
for 8 leaves
Method:

Trim the stalks from
the nasturtium leaves at the point where they meet
the leaves.

Mix your chosen filling with a fork
and place about a flat tablespoonful on the edge of
each leaf.

Carefully roll into a cigarette shape,
pressing the filling into shape as you roll. Trim
the ends neatly with scissors.

Arrange the rolls
on a serving plate and garnish with nasturtium
flowers.
Note: Nasturtium leaves look
good, taste good, and roll up nicely. The leaves are
free of tough stalks and veins, and they don't split
or tear easily. Serve the roll-ups with chilled
white wine on a summer evening.
