Pan-Fried
Cauliflower with Lovage and Lemon Recipe
Ingredients

1 small cauliflower, trimmed of
leaves and central stalks

4 tablespoons
unsalted butter
-
5 tablespoon
stale bread crumbs
-
1 tablespoon
olive oil
-
1 garlic
clove, thinly sliced
-
3 tablespoons
chopped lovage
-
1/2 teaspoon
finely grated lemon zest
-
sea salt
flakes
-
coarsely
ground black pepper
Serves 4 as a side
dish
Method:
-
Steam the
cauliflower over boiling water for 10-15
minutes, until it is reasonably tender but not
disintegrating. Divide into florets and set a
side.

Melt half the
butter in skillet over moderate to high heat.
When it is foaming add the bread crumbs, and fry
until crisp. Transfer to a small bowl and wipe
out the pan.

Heat the oil and
the remaining butter over moderate heat. Add the
garlic, lovage, and cauliflower. Fry for 3-4
minutes, tossing gently, until the cauliflower
is flecked with gold.

Transfer the
contents of the pan to a heated serving dish.
Add the bread crumbs, lemon zest, a remaining in
the pan and toss carefully to mix.
