Patatas Bravas Recipe
Ingredients

2 lb firm-fleshed
potatoes, peeled and cut into 3/4 inch pieces

5 tablespoons olive
oil

1 tablespoon tomato
paste

2 large garlic
cloves, crushed

1 teaspoon paprika
-
1/2 teaspoon cayenne
pepper

salt
Serves 4 as a side
dish or 8 as a snack with drinks
Method:

Preheat the oven to
350F. Steam the potatoes over boiling water for 5
minutes until barely tender. Alternatively,
microwave them.

Drain and spread out to dry on a
clean dishtowel for a few moments, then put them in
a large bowl.

Combine the remaining ingredients,
pour over the potatoes, and toss gently to coat.

Put the potato cubes in a roasting pan, spreading
them out well in a single layer. If you
overcrowd them, they will steam instead of crisping
up and browning. Scrape in any oily residue
remaining in the bowl.

Bake in the preheated oven,
turning every so often, for 25-30 minutes, until a
rich gold in color and slightly blackened at the
edges. Tip into a warmed bowl and serve without
delay.
