Stuffed Baby

Ingredients

12 baby bell
peppers,
about 1 1/2
inches
long, halved lengthwise, and seeded

sea salt and freshly ground black
pepper
For the avocado
stuffing:

1 large avocado,
mashed
-
juice of 1 lime 1
scallion (green parts included), finely chopped

2
tablespoons
chopped fresh cilantro
For the goat cheese
stuffing:
For the mozzarella,
pancetta, and sage stuffing:

4 oz mozzarella
cheese, very
finely diced

2 3/4 oz pancetta,
finely diced and fried until
crisp

1 tablespoon
chopped fresh sage

Method:

Preheat the oven to
450°F. Arrange the pepper halves, cut side down, in
a roasting pan, leaving plenty of space between
them.

Bake in the oven for 7-10 minutes, until the
edges are charred. Leave to cool. Peel away the skin
if it is tough.

Combine the stuffing ingredients
separately, season each to taste, and fill each
pepper half with a heaped teaspoonful.
