Vegetables Recipes - Two-Carrot Soup with Lovage Recipe

Ingredients 

  • 4 tbsp unsalted butter

  • 4 tbsp chopped lovage

  • 1 white onion, chopped

  • 2 potatoes, sliced

  • 8 oz white carrots, sliced

  • 3 3/4 cups vegetable or chicken stock, preferably homemade

  • salt and freshly ground black pepper

  • small lovage leaves, to garnish

Serves 4


Method:

  1. Divide the butter and lovage between two saucepans and melt the butter over medium-low heat. Add an equal amount of onion and potato to each pan.

  2. Put all the orange carrots in one pan and all the white carrots in the other. Cover and sweat for 10 minutes, stirring occasionally.

  3. Divide the stock between the two pans and season with salt and pepper. Bring to a boil, then simmer for 15 minutes.

  4. Liquidize the mixtures separately and return to their pans. Reheat gently and check the seasoning.

  5. Slowly pour some of each colored soup into warmed bowls. Swirl the colors and garnish with a lovage leaf.
