Leaves with Bacon Recipe
Ingredients

1/2 cup finely diced bacon lardons

3
tablespoons extra-virgin olive oil
-
2
garlic cloves, thinly sliced

2
large handfuls trimmed young dandelion
-
leaved chicory or pissenlit
-
salt and freshly ground black pepper

2
teaspoons balsamic vinegar
-
2
freshly cooked hard-boiled eggs, halved
-
warm ciabatta bread, to serve
Serves 2 as an
appetizer
Method:

Using a small nonstick skillet, fry the bacon
lardons without any oil until crisp.

Heat the
olive oil in a large skillet over moderate heat. Add
the garlic and gently fry until just beginning to
color.

Throw in the leaves, season with salt and
pepper, and stir for a few minutes until wilted.
Splash with the balsamic vinegar.

Divide between
two plates, pour over the juices, and top with crisp lardons and the hardboiled egg halves. Serve
immediately with plenty of ciabatta bread.
