Vegetables Recipes - Wilted Bitter Leaves with Bacon Recipe

Ingredients 

  • 1/2 cup finely diced bacon lardons

  • 3 tablespoons extra-virgin olive oil

  • 2 garlic cloves, thinly sliced

  • 2 large handfuls trimmed young dandelion­

  • leaved chicory or pissenlit

  • salt and freshly ground black pepper

  • 2 teaspoons balsamic vinegar

  • 2 freshly cooked hard-boiled eggs, halved

  • warm ciabatta bread, to serve

Serves 2 as an appetizer


Method:

  1. Using a small nonstick skillet, fry the bacon lardons without any oil until crisp.

  2. Heat the olive oil in a large skillet over moderate heat. Add the garlic and gently fry until just beginning to color.

  3. Throw in the leaves, season with salt and pepper, and stir for a few minutes until wilted. Splash with the balsamic vinegar.

  4. Divide between two plates, pour over the juices, and top with crisp lardons and the hard­boiled egg halves. Serve immediately with plenty of ciabatta bread.
