Vegetable Recipes - Aloo Sag Recipe

Ingredients

Serve 4

  • 6 tablespoons oil

  • 1 onion, chopped

  • 2.5 cm/1 inch piece of fresh root ginger, chopped

  • 2 fresh green chilies, finely chopped

  • 1 teaspoon turmeric

  • 2 garlic cloves, finely chopped

  • 500 g/1 lb potatoes, cut into small pieces

  • 500 g/1 lb frozen leaf spinach, defrosted salt


Method:

  1. Heat the oil in a frying pan, add the onion and cook until soft. Add the ginger, chilies, turmeric and garlic, and cook for 5 minutes.

  2. Add the potatoes, and salt to taste, stir well, cover, and cook for 10 minutes.

  3. Drain the spinach in a colander, pressing down firmly with a wooden spoon to squeeze out excess moisture.

  4. Chop the spinach, add to the potatoes and cook for about 5 minutes, until both vegetables are tender. Serve hot.

Note: This recipe uses frozen spinach, but you could use fresh if you prefer, which would give both a slightly stronger color and flavor.
