Aloo Sag Recipe

1 onion, chopped

2.5 cm/1 inch piece of fresh root ginger, chopped

2 fresh
green chilies, finely chopped

teaspoon turmeric

garlic cloves, finely chopped

500 g/1 lb potatoes, cut into small pieces

500 g/1 lb frozen leaf spinach, defrosted salt
Method:

Heat the oil in a frying pan, add the onion and cook
until soft. Add the ginger, chilies, turmeric and
garlic, and cook for 5 minutes.

Add the potatoes,
and salt to taste, stir well, cover, and cook for 10
minutes.

Drain the spinach in a colander, pressing down
firmly with a wooden spoon to squeeze out excess
moisture.

Chop the spinach, add to the potatoes and
cook for about 5 minutes, until both vegetables are
tender. Serve hot.
Note:
This recipe uses frozen spinach, but you could use
fresh if you prefer, which would give both a
slightly stronger color and flavor.
