First, Melt the butter in a large saucepan, add the
onion and garlic and fry gently for 5 minutes.
Stir in
the cabbage and apples and simmer for 10 minutes,
stirring occasionally.
Add the caraway seeds, vinegar,
measured water, sugar and juniper berries, if using, and
season to taste with salt and pepper.
Bring to the boil,
lower the heat and simmer for 30-45 minutes, until the
cabbage is tender and most of the liquid has been
absorbed. Serve immediately.
