Vegetable Recipes - Baby Glazed Carrots Recipe

Ingredients

Serve 4

  • 25 g/1 oz butter

  • 500 g/1 lb young carrots, quartered lengthways

  • pinch of sugar

  • 2 tablespoons orange juice

  • salt and pepper

  • chopped parsley, to garnish


Method:

  1. Melt the butter in a saucepan, add the carrots, sugar, salt and pepper.

  2. Pour in just enough water to cover and cook gently, uncovered, for 15-20 minutes until the carrots are tender and the liquid has evaporated.

  3. Add the orange juice towards the end of cooking time. Sprinkle with the parsley and serve.
