25 g/1 oz butter
-
500 g/1 lb young carrots, quartered lengthways

pinch
of sugar
-
2
tablespoons orange juice
-
salt and pepper
-
chopped parsley, to garnish
Method:
-
Melt the butter
in a saucepan, add the carrots, sugar, salt and pepper.

Pour
in just enough water to cover and cook gently,
uncovered, for 15-20 minutes until
the
carrots are tender and the liquid has evaporated.
-
Add the orange juice towards the end of cooking
time. Sprinkle with the parsley and serve.
