Vegetable Recipes - Braised Courgettes Recipe

Ingredients

Serve 4

  • 2 tablespoons olive oil

  • 25 g/1 oz butter

  • 1 shallot, finely chopped

  • 6 yellow or green courgettes or a mixture of both, cut into 5 cm/2 inch sticks

  • 375 g/12 oz tomatoes

  • 2 tablespoons stock

  • 20 black olives, pitted and halved

  • 1/4 teaspoon chopped oregano

  • 1 tablespoon chopped parsley

  • 1 mozzarella cheese, cubed

  • salt and pepper


Method:

  1. Heat the oil and butter in a large shallow pan, add the shallot and cook over a low heat until softened.

  2. Add the courgettes and cook for a few minutes over a high heat, then reduce it to moderate. Add the tomatoes and mash with a fork.

  3. Season to taste with salt and pepper and leave to cook until the courgettes are tender, adding a little stock if necessary.

  4. Add the olives, oregano and parsley, and scatter the mozzarella cheese over the top.

  5. Cover the pan, turn off the heat and leave to rest for a few minutes, then serve.
