Vegetable Recipes - Broccoli with Anchovies Recipe

Ingredients

Serve 4

  • 75 g/3 oz pine nuts

  • 1 kg/2 lb broccoli, divided into florets

  • 50 g/2 oz butter

  • 4 tablespoons lemon juice

  • 4 anchovy fillets, finely chopped

  • 75 g/3 oz Parmesan cheese, freshly grated

  • salt and pepper


Method:

  1. Place the pine nuts in a heavy-based frying pan and dry-fry over a moderate heat, stirring constantly, until golden all over. Set aside.

  2. Steam the broccoli or plunge it into boiling water for 2 minutes, then drain well and transfer to a bowl.

  3. Melt the butter in a small saucepan, add the lemon juice and anchovies, and heat until the butter foams.

  4. Pour the melted butter over the broccoli, sprinkle with salt and pepper and toss.

  5. Sprinkle the broccoli with the Parmesan and pine nuts, and serve.
