4 tablespoons olive
oil
-
50 g/2 oz butter
-
3 garlic cloves,
roughly chopped
-
750 g/1 1/2 lb green
and yellow courgettes, thinly sliced diagonally
-
1 tablespoon
chopped oregano, plus extra to garnish

salt and
pepper
Method:

Heat
the oil and butter in a large wok or frying pan, add the
garlic and cook gently for 1 minute, without browning.

Add the courgettes and stir well to coat in the butter
and oil. Sauté for 2 minutes, stirring.

Season with salt
and pepper and stir in the oregano. Cook for 5-6
minutes, stirring constantly, until
the courgettes are just tender.

Transfer to a
warmed serving dish, garnish with sprigs of oregano, if
using, and serve immediately.
