Vegetable Recipes - Courgettes with Oregano Recipe

Ingredients

Serve 4

  • 4 tablespoons olive oil

  • 50 g/2 oz butter

  • 3 garlic cloves, roughly chopped

  • 750 g/1 1/2 lb green and yellow courgettes, thinly sliced diagonally

  • 1 tablespoon chopped oregano, plus extra to garnish

  • salt and pepper


Method:

  1. Heat the oil and butter in a large wok or frying pan, add the garlic and cook gently for 1 minute, without browning.

  2. Add the courgettes and stir well to coat in the butter and oil. Sauté for 2 minutes, stirring.

  3. Season with salt and pepper and stir in the oregano. Cook for 5-6 minutes, stirring constantly, until the courgettes are just tender. 

  4. Transfer to a warmed serving dish, garnish with sprigs of oregano, if using, and serve immediately.
