Vegetable Recipes - Fried Courgettes with Chilies Recipe

Ingredients

Serve 4

  • 750 g/1 b courgettes, thickly sliced

  • 75 g/3 oz plain flour

  • oil, for frying

  • 50 g/2 oz butter

  • 'A teaspoon crushed dried chilies

  • 2 garlic cloves, chopped

  • grated rind and juice of 1 lemon

  • 1 tablespoon green olives, pitted and chopped salt and pepper


Method:

  1. Dust the courgette slices with flour. Heat the oil in a frying pan, add the courgettes in batches and fry for 2 minutes on each side, until golden. Remove from the pan and keep warm.

  2. When all the courgettes are cooked, pour off the oil from the pan.

  3. Add the butter, chilies, garlic, lemon juice and rind and the green olives, and heat until the butter is foaming.

  4. Pour over the courgettes, season with salt and pepper, and toss. Serve immediately.
