Griddled Warm New
Potatoes with Fresh Mint Dressing Recipe

750 g/1 3/4 lb small
new potatoes, halved lengthways
finely grated rind
and juice of 2 limes
8 tablespoons
grape seed oil
2 tablespoons
chopped mint
sea salt and pepper
mint leaves, to
garnish
Method:
Heat
a griddle pan or nonstick frying pan. Place a layer
of potato halves on the hot griddle and cook for 6
minutes on each side, reducing the heat as required.
Remove and keep warm while cooking the remaining potatoes.
Combine the lime rind and juice and the oil, beating
well with a whisk.
Add the chopped mint, salt and
pepper, and whisk until evenly combined.
Alternatively, place all the ingredients in a
screw-top jar and shake well to combine.
Toss the potatoes in the dressing, transfer to a
warmed serving dish, garnish with mint leaves, and
serve.
