Vegetable Recipes - Griddled Warm New Potatoes with Fresh Mint Dressing Recipe

Ingredients

Serve 4

  • 750 g/1 3/4 lb small new potatoes, halved lengthways

  • finely grated rind and juice of 2 limes

  • 8 tablespoons grape seed oil

  • 2 tablespoons chopped mint

  • sea salt and pepper

  • mint leaves, to garnish


Method:

  1. Heat a griddle pan or nonstick frying pan. Place a layer of potato halves on the hot griddle and cook for 6 minutes on each side, reducing the heat as required.

  2. Remove and keep warm while cooking the remaining potatoes. Combine the lime rind and juice and the oil, beating well with a whisk.

  3. Add the chopped mint, salt and pepper, and whisk until evenly combined. Alternatively, place all the ingredients in a screw-top jar and shake well to combine.

  4. Toss the potatoes in the dressing, transfer to a warmed serving dish, garnish with mint leaves, and serve.
