Grilled Asparagus
with Walnut Sauce Recipe
Ingredients

Walnut sauce:

50 g/2 oz
walnuts

2 large spring onions, very finely chopped

1
garlic clove, crushed

1 teaspoon grated lemon rind

1 tablespoon chopped basil

1 tablespoon chopped parsley

4 tablespoons walnut oil, plus extra for brushing

50 ml/2

oz milk

25 g/1 oz
vegetarian Parmesan cheese, grated (optional)
Method:

First make the sauce. Fry the walnuts in a dry
frying pan over moderate heat, stirring, until
toasted. Grind them with the spring onions, garlic,
lemon rind and herbs.

Whisk in the oil and then the
milk to form a smooth sauce of a fairly thick
pouring consistency.

Brush the asparagus with oil
and place under a preheated hot grill for 5-6
minutes, turning frequently until golden and tender.

Transfer the asparagus to a warmed gratin dish, pour
over the sauce and then sprinkle over the cheese, if
using.

Return to the grill for 1-2 minutes until
bubbling. Serve at once.
Note: To
serve as a starter, transfer the grilled asparagus to
individual gratin dishes, spread over the sauce and
return to the grill.
