Mashed Potato with
Coriander Root Recipe

1 kg/2 lb
floury potatoes

tablespoons olive oil

g/1/4 oz coriander roots

tablespoons chopped coriander leaves milk (optional)

salt and pepper
Method:

Cook the potatoes in a saucepan of salted boiling water
for 15-20 minutes until tender. Drain well, then return
to the pan and mash until smooth.

Meanwhile, heat the
oil in a small pan, add the coriander roots, and fry
very gently until tender.

Remove from the heat and stir
in the chopped coriander. Transfer to a liquidizer and
process to form a smooth paste.

Add the coriander paste
to the mashed potatoes with plenty of salt and pepper,
and beat gently until evenly combined.

Stir in a little
milk to form a softer mixture, if liked, and serve at
once.
Note:
Coriander roots can be found still attached to
bunches of coriander in some supermarkets or
greengrocers. Coriander stalks, chopped very finely,
are a suitable alternative.
