Vegetables with Fresh Herbs Recipe
Ingredients

4 tablespoons olive
oil
1 garlic clove,
crushed
3 large onions,
sliced
3 large green
peppers, cored, deseeded and sliced
400 g/13 oz can
tomatoes
3 tablespoons
chopped parsley or chervil
2
tablespoons
chopped basil
2 tablespoons
chopped thyme
1-2 tablespoons
capers
10-12 black olives,
pitted
salt and pepper
Method:
Heat the oil in a pan, add the garlic and
onions, and fry very gently for 10 minutes,
stirring occasionally.
Add the green peppers and
cook gently, stirring, for 1 minute. Add the
tomatoes and their juice, then the herbs, and
season to taste with salt and pepper.
Bring to
the boil, then lower the heat, cover and simmer
for 30 minutes, stirring occasionally until the
vegetables are very soft.
Remove from the heat.
Stir in the capers and black olives, then taste
and adjust the seasoning. Serve warm, or chilled
as a starter.
