Vegetable Recipes - Potato and Leek Bake Recipe

Ingredients

Serve 6

  • 1.25 kg/2 1/2 lb potatoes, peeled

  • 500 g/1 lb leeks, trimmed and sliced

  • 1 garlic clove, crushed (optional)

  • 150 ml/1 1/4 pint single cream

  • 50 g/2 oz Cheddar cheese, grated

  • 25 g/1 oz fresh breadcrumbs

  • salt and pepper

  • parsley sprigs, to garnish (optional)


Method:

  1. Place the potatoes in a saucepan of salted boiling water and parboil for 3 minutes. Drain and slice.

  2. Place the leeks and garlic, if using, in a greased ovenproof dish and season with pepper. Arrange the potatoes on the top and pour the cream over.

  3. Cover with foil and bake in a preheated oven, 190°C (375°F), Gas Mark 5, for 45 minutes until the potatoes are tender.

  4. Sprinkle with the cheese and breadcrumbs and cook under a preheated moderate grill until the top is browned.

  5. Garnish with parsley sprigs, if liked, and serve at once.
