Vegetable Recipes - Quick Italian Spinach Recipe

Ingredients

Serve 4

  • 1 tablespoon olive oil

  • 1 red onion, sliced

  • 1 garlic clove, chopped

  • 75 g/3 oz pine nuts

  • 4 tomatoes, skinned, cored and roughly chopped

  • 1 kg/2 lb spinach

  • 50 g/2 oz butter pinch of nutmeg

  • salt and pepper


Method:

  1. Heat the oil in a large saucepan, add the onion and garlic and sauté for 5 minutes.

  2. Put the pine nuts into a heavy-based frying pan and dry-fry over moderate heat until browned, stirring constantly. Set aside.

  3. Add the tomatoes, spinach, butter and nutmeg to the onions and garlic, and season with salt and pepper.

  4. Turn up the heat to high and mix well. Cook for 3 minutes until the spinach has just started to wilt.

  5. Remove the pan from the heat, stir in the pine nuts and serve immediately.
