Vegetable Recipes - Ratatouille Recipe

Ingredients

Serve 6-8

  • 4 tablespoons olive oil

  • 3 onions, finely chopped

  • 3 garlic cloves, finely chopped

  • 750 g/1 1/2 lb tomatoes, skinned and chopped

  • 5 courgettes, sliced

  • 2 large aubergines, sliced

  • salt and pepper

  • 2 tablespoons chopped parsley


Method:

  1. Heat the oil in a frying pan, add the onions and garlic and fry gently for 5 minutes.

  2. Add the tomatoes and cook for a few minutes until the juice starts to flow.

  3. Add the courgettes and aubergines and stir them all together to mix well. Add a little salt and pepper.

  4. Cover the pan and simmer for about 30 minutes, or until the vegetables are softened.

  5. Taste and adjust the seasoning if necessary, then stir in some of the chopped parsley. Serve hot or cold, with some more parsley sprinkled on the top.
