Roast Potatoes
with Rosemary and Garlic Recipe

4 tablespoons olive
oil
2 tablespoons
chopped rosemary .
750 g/1 1/2 lb medium
potatoes, unpeeled and quartered lengthways
4 garlic cloves,
peeled and sliced
salt and pepper
Method:
Put 2 tablespoons of the oil into a large
roasting tin, and place in a preheated oven,
230°C (450°F), Gas Mark 8, to warm through. Make
sure the potatoes are dry.
Mix together the
remaining oil and the rosemary, and toss the
potatoes to coat them completely.
Add the
potatoes to the roasting tin in the oven, shake
carefully to give an even layer, then place the
tin at the top of the oven and roast for 20
minutes.
Remove the tin from the oven and move the
potatoes around so that they cook evenly.
Scatter the garlic amongst the potatoes, return
the tin to the oven and cook for a further 5
minutes.
Remove the potatoes from the oven,
season to taste with salt and pepper, and serve
immediately.
