Vegetable Recipes - Scalloped Potatoes with Onions Recipe

Ingredients

Serve 4-6

  • 1 kg/2 lb potatoes, thinly sliced

  • 1 large onion, thinly sliced

  • 150 ml/1/4 pint Beef Stock

  • 25 g/1 oz butter, melted

  • salt and pepper

  • 1 tablespoon chopped parsley, to garnish


Method:

  1. Make layers of the potatoes and onion in a well buttered ovenproof dish, seasoning them generously with salt and pepper.

  2. Bring the stock to the boil and pour over the potatoes, then brush liberally with the melted butter.

  3. Cover with foil and cook in a preheated oven, 180°C (350°F), Gas Mark 4, for 1 1/2 hours.

  4. Remove the foil and cook for a further 30 minutes or until the potatoes are cooked through and lightly browned.

  5. Place under a moderate grill until the potatoes are brown and crispy on top. Serve hot, garnished with parsley.
