Spinach with Olive
Oil and Lemon Dressing Recipe

Method:

Put the spinach in a
large saucepan with just the water left on the
leaves, sprinkling the layers with salt to taste.

Cover the pan and cook over a medium heat for 5-7
minutes until the spinach has wilted and is tender,
shaking the pan vigorously from time to time.

Drain the spinach thoroughly in the colander, then
return it to the rinsed-out pan and toss over a high
heat until any remaining water is driven off.

Add
the butter and garlic, and continue tossing until
combined with the spinach.
Transfer to a warmed serving dish.

Drizzle over the
oil and lemon juice, sprinkle with salt and pepper
to taste, and serve.
Note:
For this recipe, fresh spinach can be cooked and
drained several hours in advance, then tossed with
the butter and garlic just before serving. You can
also use frozen leaf spinach. Defrost it first and
drain it thoroughly, toss with the butter and garlic
and continue as for fresh spinach.
