Vegetable Recipes - Stir-fried Summer Vegetables Recipe

Ingredients

Serve 6

  • 2 tablespoons vegetable oil

  • 4 spring onions, trimmed and cut into 5 cm/2 inch lengths

  • 2 garlic cloves, thinly sliced

  • 1 cm/1/2 inch slice of fresh root ginger, shredded

  • 125 g/4 oz green beans, halved

  • 1/2 small cauliflower, broken into small florets

  • 125 g/4 oz mangetout

  • 3 celery sticks, diagonally sliced

  • 50 g/2 oz courgettes, diagonally sliced

  • 1 red pepper, cored, deseeded and thinly sliced

  • 1 green pepper, cored, deseeded and thinly sliced

  • 1 yellow pepper, cored, deseeded and thinly sliced

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame seed oil

  • pepper


Method:

  1. Heat the oil in a wok or large frying pan, add the spring onions, garlic and ginger, and stir-fry for 30 seconds without browning.

  2. Add all the remaining vegetables, then pepper to taste, and toss well. Stir-fry for 2 minutes.

  3. Stir in the soy sauce and sesame seed oil and serve immediately.
