2 tablespoons
vegetable oil

4 spring onions,
trimmed and cut into 5 cm/2 inch lengths

2 garlic cloves, thinly sliced

1 cm/1/2 inch slice
of fresh root ginger, shredded

125 g/4 oz green
beans, halved
-
1/2 small
cauliflower, broken into small florets
-
125 g/4 oz mangetout
-
3 celery sticks,
diagonally sliced
-
50 g/2 oz
courgettes, diagonally sliced

1 red pepper,
cored, deseeded and thinly sliced
-
1 green pepper,
cored, deseeded and thinly sliced
-
1 yellow pepper,
cored, deseeded and thinly sliced

2 tablespoons soy
sauce
-
1 teaspoon sesame
seed oil

Method:
-
Heat the oil in a wok or large frying pan, add the
spring onions, garlic and ginger, and stir-fry for
30 seconds without browning.

Add all the remaining
vegetables, then pepper to taste, and toss well.
Stir-fry for 2 minutes.

Stir in the soy sauce and
sesame seed oil and serve immediately.
