Mix the potatoes with the cabbage or kale, egg,
cheese, nutmeg and seasoning. Divide and shape into
eight patties.
Chill in the fridge for an hour or so, if possible,
as this enables the mixture to become firm and makes
it easier to fry. Toss the patties in the flour.
Heat about 1cm/1/2 in oil in a frying pan until it
is quite hot.
Carefully slide the patties into the oil and fry on
each side for about 3 minutes until golden and
crisp. Drain on kitchen paper and serve hot and
crisp.
