Chinese Potatoes with Chili Beans Recipe

 

Ingredients

  • 4 potatoes, cut into thick chunks

  • 3 spring onions, sliced

  • 1 large fresh chili, seeded and sliced

  • 30ml/2 tbsp sunflower or groundnut oil

  • 2 garlic cloves, crushed

  • 400g/14 oz can red kidney beans

  • 30ml/2 tbsp dark soy sauce

  • 15ml/1 tbsp sesame oil

  • salt and ground black pepper

  • 15ml/1 tbsp sesame seeds, to sprinkle

  • chopped fresh coriander or parsley, to garnish

Serves 4


Method:

  1. Boil the potatoes until they are just tender. Take care no to overcook them. Drain and reserve.

  2. In a large frying pan or wok, stir-fry the spring onions and chili in the oil for about 1 minute, then add the garlic and fry for a few seconds longer.

  3. Rinse and drain the kidney beans, then add them to the pan with the potatoes, stirring well. Finally add the soy sauce and sesame oil.

  4. Season to taste with salt and pepper and cook the vegetables until they are well heated through. Sprinkle with the sesame seeds and the chopped fresh coriander or parsley.
