Grilled Mixed Peppers Recipe

 

Ingredients

  • 4 medium peppers in different colors

  • 45ml/3 tbsp chopped fresh flat-leaf parsley

  • 45ml/3 tbsp chopped fresh dill

  • 45ml/3 tbsp chopped fresh mint

  • 1 small red onion, finely chopped

  • 15ml/1 tbsp capers, coarsely chopped

  • 50g/2 oz Greek olives, pitted and sliced

  • 1 fresh green chili, seeded and finely chopped

  • 75ml/5 tbsp extra-virgin olive oil

  • 45ml/3 tbsp fresh lime juice

  • 115g/4 oz medium-fat feta cheese, crumbled

  • 25g/1 oz gherkins, finely chopped

Serves 4


Method:

  1. Preheat the grill. Place the whole peppers on a tray and grill until charred and blistered.

  2. Place the peppers in a plastic bag and leave to cool.

  3. Peel, seed and cut the peppers into even strips.

  4. To make the salsa, mix all the remaining ingredients together, and stir in the pepper strips.
