Nutty Cheese Balls Recipe

 

Ingredients

  • 225g/8 oz low-fat soft cheese such as Quark

  • 50g/2 oz dolce latte cheese

  • 15ml/1 tbsp finely chopped onion

  • 15ml/1 tbsp finely chopped celery stick

  • 15ml/1 tbsp finely chopped fresh parsley

  • 15ml/1 tbsp finely chopped gherkin

  • 5ml/1 tsp brandy or port (optional)

  • pinch of paprika

  • 50g/2 oz walnuts, roughly chopped

  • 90ml/6 tbsp snipped fresh chives

  • salt and ground black pepper

Serves 4


Method:

  1. Beat the soft cheese and dolce latte together using a spoon, until quite smooth.

  2. Mix in all the remaining ingredients, except the snipped chives, stirring well to combine.

  3. Divide the mixture into 12 pieces and roll into balls.

  4. Roll each ball gently in the snipped chives. Leave to chill in the fridge for about an hour before serving.

Notes: For an alternative look, mix the chives with the rest of the ingredients but omit the walnuts. Instead, chop the walnuts finely and use to roll on to the cheese balls.
