Potato and Broccoli Stir-fry Recipe

 

Ingredients

  • 450g/1 lb potatoes

  • 45ml/3 tbsp groundnut oil

  • 50g/2 oz butter

  • 1 small onion, chopped

  • 1 red pepper, seeded and chopped

  • 225g/8 oz broccoli, broken into florets

  • 2.5cm/1 in piece of fresh root ginger, peeled and grated

  • salt and ground black pepper

Serves 2


Method:

  1. Peel the potatoes and cut them into 1cm/1/2 in dice.

  2. Heat the oil in a large frying pan and cook the potatoes for 8 minutes over a high heat, stirring and tossing occasionally, until browned and just tender.

  3. Drain off oil. Add the butter to the  potatoes in the pan. As soon as it  melts, add the chopped onion and red pepper. Stir-fry for 2 minutes.

  4. Add the broccoli florets and ginger to the pan. Stir-fry for 2-3 minutes more, taking care not to break up the potatoes.

  5. Season to taste with salt and pepper and serve at once.
