Ratatouille with Cheese Croutons Recipe

 

Ingredients

  • 3 thick slices white bread

  • 225g/8 oz firm Camembert cheese

  • 60ml/4 tbsp olive oil

  • 1 garlic clove, chopped

  • 400g/14 oz can ratatouille

  • fresh parsley sprigs, to garnish

Serves 2


Method:

  1. Trim the crusts from the bread slices and discard. Cut the bread into 2.5cm/1 in squares. Cut the Camembert cheese into 2.5cm/1 in cubes.

  2. Heat 45ml/3 tbsp of the oil in a frying pan and cook the bread over a high heat for 5 minutes, stirring constantly, until golden all over.

  3. Reduce the heat, add the garlic and cook for 1 minute more. Remove the croutons with a slotted spoon.

  4. Tip the ratatouille into a saucepan and place over a moderate heat, stirring occasionally, until hot.

  5. Heat the remaining oil in the frying pan. Add the cheese cubes and sear over a high heat for 1 minute.

  6. Divide the hot ratatouille between two serving bowls, spoon the croutons and cheese on top, garnish with parsley and serve at once.
