Vegetable and Tofu
Kebabs Recipe
Ingredients

1 yellow pepper
-
2 small courgettes
-
225g/8 oz piece of firm tofu
-
8 cherry tomatoes
-
6 button mushrooms
-
15ml/1 tbsp wholegrain mustard
-
15ml/1 tbsp clear honey
-
30ml/2 tbsp olive oil
-
salt and ground black pepper
-
cooked mixed rice and wild rice, to serve

lime wedges ad flat-leaf parsley, to garnish
Serves 4
Method:

Cut the pepper in half and remove the seeds. Cut
each half into quarters and cut each quarter in
half.

Top and tail the courgettes. Cut each courgette into
seven or eight chunks.

Cut the tofu into 4cm/1 1/2 in pieces.

Thread the pepper pieces, courgette chunks, tofu,
cherry tomatoes and mushrooms alternately on to four
metal or bamboo skewers, soak them in a bowl of cold
water first. This will prevent them from charring
during grilling.

Whisk the mustard, honey and olive oil in a small
bowl. Season to taste with salt and pepper.

Put the kebabs on to a baking sheet. Brush them with
the mustard and honey glaze. Cook under the grill
for 8 minutes, turning once or twice during cooking.

Serve with mixture of long grain and wild rice, and
garnish with lime wedges and flat leaf parsley.
